Neelam Patel (she/her), MD, is the Director of Child and Adolescent Medicine, Georgia, at Accanto Health, the parent company of Veritas Collaborative, The Emily Program, and Gather Behavioral Health. She works with a team of medical providers at our eating disorder treatment center in Atlanta to provide care for our inpatient and residential patients.
Elouise Cram (she/her) is the Lead Therapist at Veritas Collaborative’s Child, Adolescent & Adult Center in Charlotte, North Carolina. She obtained her undergraduate degree in public health from Clemson University (go tigers!) and her MSW from the University of South Carolina (go cocks!). She has worked in several eating disorder treatment settings across various levels of care.
Elouise appreciates bringing the values of curiosity, collaboration, and willingness into her therapeutic approach. She enjoys working with individuals to find peace with their food, their bodies, and themselves. While her practice is primarily acceptance and commitment therapy (ACT)-informed, she also incorporates principles and tools from dialectical behavior therapy (DBT), cognitive behavioral therapy (CBT), and emotion-focused therapy (EFT). Elouise is excited to hold warm, validating, and often humor-filled space (when appropriate!) to work alongside individuals of all ages.
When not at work, Elouise can be found smashing pickleballs, listening to Maggie Rogers, or chasing her rescue doodle, Poppy.
Maddie Koermer (she/her) is a Clinical Manager of Outpatient Services at Veritas Collaborative’s Triangle Child, Adolescent & Adult Eating Disorder Treatment Center in Durham, North Carolina. Maddie greatly appreciates being part of a patient’s care team and enjoys walking alongside patients and families as they navigate the recovery journey.
Maddie obtained her Master of Social Work (MSW) from Loyola University of Chicago and is a Licensed Clinical Social Worker (LCSW) in North Carolina. She began her career at Veritas Collaborative in 2016 and has experience working with patients and their families across multiple levels of care, including inpatient, residential, partial hospitalization (PHP), and intensive outpatient (IOP). She is particularly passionate about the PHP and IOP levels of care and multi-family programming.
As a clinical manager, Maddie is always pleased to help connect families to psychoeducational and supportive resources in their local area. She also thoroughly enjoys supervising student interns and clinicians in eating disorder treatment. Maddie pulls from various treatment modalities, including dialectical behavior therapy (DBT), family based therapy (FBT), and motivational interviewing. She strongly believes that every eating disorder is significant enough to receive help.
Amy Laster (she/her) is the Clinical Manager of Veritas Collaborative’s Triangle Child, Adolescent & Adult Eating Disorder Treatment Center in Durham, North Carolina. In this role, Amy serves as clinical and staff support for adult partial hospitalization (PHP) and intensive outpatient (IOP), and adolescent PHP/IOP. Amy is an experienced resource for our patients, able to provide individual therapy, family therapy, couples therapy, group therapy, clinical supervision, and therapeutic meal support.
Amy is a Licensed Professional Counselor (LCMHC) in North Carolina, earning her Master of Science in mental health counseling from Nova Southeastern University. Since 2019, Amy has worked with Veritas patients across numerous levels of care, including inpatient, residential, and PHP/IOP. She utilizes an integrated approach to therapy, which incorporates features of dialectical behavior therapy (DBT), acceptance and commitment therapy (ACT), cognitive behavioral therapy (CBT), and exposure and response prevention (ERP). Her interest in lower levels of care led her to her current role as a clinical manager.
Amy loves to learn and even helped develop the curriculum utilized across Accanto Health. She strongly believes that thorough assessment and development of an evidence-based treatment plan underpin the success of treating eating disorders. Amy is also passionate about increasing access to care for all individuals who are struggling. She enjoys partnering with external community providers to provide education on the detection and treatment of eating disorders. One of Amy’s goals is to grow awareness of inherent biases surrounding body size and nutrition, as well as to break down harmful eating disorder-related stigma.

Why is Veritas expanding its outpatient offerings?
At Veritas Collaborative, we believe in offering the right level of care at the right time for each individual.
Outpatient levels of care, including PHP, IOP, and OP, allow us to provide treatment for patients who are struggling with an eating disorder but are medically stable enough that 24/7 residential or inpatient care is not needed.
Specialty outpatient treatment for eating disorders offers effective early intervention. It is imperative that eating disorders are treated as soon as they’re identified. There’s no such thing as not being “sick enough” to receive treatment. Studies show that early intervention for eating disorders leads to improved treatment outcomes, reducing the length of recovery, symptom intensity, and rate of recurrence. Early intervention for children and adolescents is especially crucial to ensure the patient’s physical, psychological, and social development continues unimpeded.
Alternatively, outpatient care is recommended for patients who are stepping down from residential and inpatient levels of care so they can transition from 24/7 treatment back to their everyday lives with a support system in place.
What is the difference between partial hospitalization (PHP), intensive outpatient (IOP), and outpatient services at Veritas Collaborative?
At Veritas Collaborative, PHP and IOP are designed for patients in need of professional support that is less intensive than what is provided in an inpatient or residential setting, but more intensive than what is provided in a traditional outpatient setting.
Our Partial Hospitalization Program (PHP) is a good fit for those who need a highly structured, supportive plan while recovering in a “real life” setting. Outside of programming hours, patients can immediately practice recovery skills in their daily lives. Patients typically spend a minimum of 30 hours per week in PHP.
Our Intensive Outpatient Program (IOP), like PHP, is for those who need more structure than non-intensive outpatient treatment, but less structure than full-day support. IOP programming runs for only a portion of the day. Patients typically spend a minimum of 12 hours per week in IOP.
Outpatient services are non-intensive sessions that typically occur weekly, biweekly, or on an as-needed basis. This level of care is meant for those who are not in a crisis phase with their eating disorder or those in recovery who need some ongoing support.
What if my patient lives far from a treatment center?
Veritas Collaborative has affordable lodging accommodations near our Triangle Outpatient Center for adults (18+) who live far away from our treatment location. If parents want to stay near their child during treatment, our staff will assist with locating nearby hotel accommodations. Your patient may also want to consider a virtual treatment option.
Does Veritas offer virtual programming at the outpatient level?
Yes, we offer both virtual and in-person treatment options for PHP, IOP, and outpatient sessions. Both virtual and in-person intensive outpatient programs include individual, group, and family therapy, therapeutic meal support, nutrition counseling, psychiatry sessions, and medical appointments, as appropriate.

Kara Stultz (she/her) is the Clinical Director at Veritas Collaborative’s Child, Adolescent & Adult Eating Disorder Treatment Center in Atlanta, Georgia. In her role, Kara works directly with the clinical team, supporting them to provide the best care possible to patients and their families.
Kara is a Licensed Professional Counselor (LPC) with a master’s in clinical rehabilitation counseling from Georgia State University. Before attending graduate school, she earned a bachelor’s in psychology with a minor in childhood and family studies from the University of Alabama. Kara is a Georgia-approved supervisor and has been working with patients with eating disorders since 2018. She has experience across all levels of care, including inpatient, partial hospitalization (PHP), intensive outpatient (IOP), and outpatient services. Kara is particularly interested in working with young adults, providing an empathetic space and assisting them in building a life worth living in recovery.
Kara finds meaning in working with the Atlanta team to provide access to care for those struggling and collaborating to save lives, one recovery story at a time.
Lauren Tinkey (she/her) is the Outpatient Nutrition & Culinary Lead at Veritas Collaborative’s Child, Adolescent & Adult Center in Charlotte, North Carolina. Lauren is responsible for the nutrition department’s effectiveness and efficiency, overseeing all of the site’s nutrition services within her role. As Outpatient Nutrition & Culinary Lead, she manages nutrition department personnel (including registered dietitians and dietetic technicians), conducts and coordinates clinical care for partial hospitalization (PHP), intensive outpatient (IOP), and outpatient levels of care, and directs operational functions of the site’s culinary and food service needs.
Lauren attended the University of Georgia (UGA) and completed her Bachelor of Science in dietetics. During her undergrad, she co-founded the Sports Nutrition Association for Pre-Professionals, and worked under the sports dietitians with UGA’s Division I athletes. Lauren completed the Coordinated Dietetics Program to earn her Master of Science in health sciences with a nutrition focus. Prior to joining Veritas, Lauren built up her clinical experience as a Registered Dietitian (RDN) and advanced her creativity and management skills working for start-ups.
Lauren embodies a balance of work-hard and play-hard. When not at work, you’re likely to find Lauren tackling a jigsaw puzzle, scheming a book swap, playing a round of golf, or seeking her adrenaline fix as an adventure sports enthusiast.
Dani Field (she/her) is the Office Manager at Veritas Collaborative’s Child, Adolescent & Adult Center in Charlotte, North Carolina. Dani manages the day-to-day administrative operations at the site, providing meaningful connections as the point of contact for patients and families. She coordinates communication between departments, ensuring patients are matched with care teams as soon as possible.
Dani earned a Bachelor of Arts in environmental studies from Green Mountain College and a Master of Social Work (MSW) with a focus in clinical practice from Hunter College. Dani has nearly a decade of office management experience, primarily in mental health.
When Dani is not in the office, you can find her spending time with her dog or exploring the city on her bicycle.

Dr. Parkavi Chellappa (she/her) serves as Director of Psychiatric Services for Veritas Collaborative’s North Carolina eating disorder treatment centers. Dr. Chellappa is a highly trained and experienced medical doctor specializing in child and adolescent psychiatry.
Dr. Chellappa completed her child and adolescent psychiatry fellowship at Cedars Sinai Medical Center in Los Angeles, California, where she gained extensive knowledge and training in diagnosing and treating psychiatric disorders in younger populations. She completed her psychiatry residency at the University of Arizona in Tucson, Arizona. While there, she gained a deep understanding of the complexities of psychiatric disorders and treatments. Dr. Chellappa is board-certified in both general psychiatry and child and adolescent psychiatry.
Dr. Chellappa completed her primary medical school education in India before moving to the United Kingdom, where she completed her psychiatry residency at Northwest Wales NHS Trust. Her international experience has allowed her to develop a unique perspective on psychiatry and has provided valuable experience working with diverse populations.
Dr. Chellappa’s vast experience has made her well-versed in treating eating disorders and a range of co-occurring conditions, including anxiety, depression, other mood disorders, attention-deficit/hyperactivity disorder (ADHD), autism spectrum disorder (ASD), and psychosis. In addition to her clinical work at Veritas Collaborative, she has held various teaching positions at academic institutions and is a published researcher.
Dr. Chellappa is widely recognized for her compassionate and patient-centered approach to psychiatry and her dedication to improving the lives of her patients and their families. She has a passion for helping children and adolescents with psychiatric disorders and takes a compassionate and holistic approach to treatment. Her expertise and experience have made her a valuable asset to the child and adolescent psychiatry field.

Laura Brown (she/her) is the Manager of Nutrition Services at Veritas Collaborative’s Child, Adolescent & Adult Eating Disorder Treatment Center in Atlanta, Georgia.
Laura received her Bachelor of Science in music business and a Master of Business Administration (MBA) at Middle Tennessee State University. After much personal reflection, musing about her own journey through eating disorder treatment, and a desire to make more of an impact on people’s relationship with nutrition, Laura decided to become a Registered Dietitian. She attended Georgia State University, where she completed the coordinated program to receive her Master of Science (MS) in health sciences with a concentration in nutrition.
Before joining Veritas, Laura worked as an eating disorder dietetic technician and an on-call dietitian at an adolescent and adult partial hospitalization (PHP)/intensive outpatient (IOP) program. Laura has worked as a Registered Dietitian (RDN) in inpatient, residential, PHP, IOP, and outpatient levels of care.

Shannon Wilcoxson (she/her) is the Office Manager at Veritas Collaborative’s Child, Adolescent & Adult Eating Disorder Treatment Center in Atlanta, Georgia. As Office Manager, Shannon oversees the Atlanta site’s front desk administrative staff. She also serves as a Therapeutic Assistant for patients in our intensive outpatient program (IOP), assisting the treatment team with various therapeutic modalities.
Nurturing youth has always been Shannon’s passion; she finds happiness in helping families obtain much-needed mental health treatment. Driven by empathy, Shannon takes pride in connecting with and understanding those struggling with mental health issues.
Shannon is currently pursuing her master’s in clinical psychology. When not busy studying, she can be found at any of Georgia’s beautiful parks, reading books and people-watching.

Eliza Russ (she/her) is the Executive Director of Veritas Collaborative’s Douglas Adult Eating Disorder Treatment Center in Durham, North Carolina. She strives to create a safe, nonjudgmental space where patients can flourish.
Eliza earned her bachelor’s degree in psychology from the University of the South in Sewanee, Tennessee, and a master’s degree in social work from the University of North Carolina at Chapel Hill. She has experience providing individual, family, and group therapy for patients with eating disorders across multiple levels of care. Most recently, Eliza served the outpatient population in a private practice. During that time, she also obtained her master’s degree in business administration from the University of North Carolina at Chapel Hill.
In addition to her training as a psychotherapist, Eliza has experience providing clinical supervision to therapists and interns. She earned her Clinical Supervision Certification (CEDS-S) through NASW-NC and is an approved supervisor through the International Association of Eating Disorder Professionals. Eliza is passionate about supporting the professional growth of emerging colleagues.
Eliza strongly believes in providing evidence-based care that is individualized to meet the needs of the patient and family. She approaches therapy with a sense of curiosity to help patients explore behavior patterns, gain insight, and develop potential solutions to facilitate changes that lead to a more peaceful, meaning-filled life.
Jenn Zambo (she/her) is the Manager of Nutrition Services at Veritas Collaborative’s RTP Child, Adolescent & Adult Eating Disorder Treatment Center in Durham, North Carolina.
Jenn attended the University of Connecticut, earning her Bachelor of Science in dietetics. She completed her Master of Science in health promotion, with a focus on health education. Jenn started her eating disorder career at the University of Connecticut Student Health Services, where she counseled students with eating disorders and advised a peer education group promoting eating disorder awareness.
Before transitioning to Veritas, Jenn worked as an eating disorder dietitian, treating adults and adolescents within an inpatient program affiliated with Walden Behavioral Care. Jenn has since worked as a Registered Dietitian in inpatient, residential, partial hospitalization, and intensive outpatient levels of care.

Amy brings an abundance of heart and experience to the Veritas Collaborative team. She celebrates a dedicated 30-year career in the mental health field, with over 20 years specializing in treating eating disorders across all levels of care. Building relationships with clinical professionals, patients, and families has been the most rewarding aspect for Amy.

Conditions Treated
Veritas Collaborative provides expert eating disorder treatment for all eating disorder diagnoses and related conditions, including:
Anorexia nervosa, characterized by a fear of weight gain and distorted body image that leads to food restriction and results in a significantly low body weight
Bulimia nervosa, defined by recurrent binge eating episodes that are followed by compensatory behaviors to prevent weight gain (e.g., self-induced vomiting, fasting, compulsive exercise, and/or the use of laxatives or diuretics)
Binge eating disorder (BED), characterized by recurrent binge eating episodes that lead to marked distress, a sense of loss of control, and feelings of disgust, self-loathing, or guilt
Avoidant/Restrictive Food Intake Disorder (ARFID), characterized by a consistent failure to meet appropriate nutritional needs due to eating or feeding disturbances such as an apparent lack of interest in food, avoidance due to the sensory qualities of food, and/or concern over adverse consequences of eating food
Other Specified Feeding or Eating Disorder (OSFED), marked by eating disorder symptoms that cause significant distress and impairment of social and/or occupational functioning, but do not meet the criteria for any other eating disorder diagnosis.
Treatment Types
All levels of care are offered at our Atlanta, Georgia eating disorder treatment center, ensuring that we can support you through each step of recovery.
Inpatient treatment
Inpatient treatment is the right fit for patients who require around-the-clock treatment and medical stabilization. Veritas is one of the only eating disorder programs in the nation that can treat individuals who require this level of care.
Residential treatment
Residential treatment is similar to inpatient in that they both include structured, around-the-clock care, but residential care is the right fit for people who do not require medical stabilization. Nursing staff are available onsite 24/7.
Partial hospitalization (PHP)/Intensive outpatient program (IOP)
Our partial hospitalization (PHP) and intensive outpatient programs (IOP) provide greater structure and support than our outpatient services, but more independence than 24/7 care. Patients typically spend a minimum of 30 hours per week in PHP and a minimum of 12 hours per week in IOP, either in person or virtually.
Outpatient treatment
Outpatient treatment takes place weekly, biweekly, or on an as-needed basis, depending on the needs of each person. This level of care is the right fit for someone who is medically stable and is looking for continued support on their recovery journey. Veritas offers in-person and virtual individual, family, and group treatment.
Virtual treatment
Veritas’ virtual eating disorder treatment uses technology to bring care to patients virtually. It allows patients to connect to their treatment team and receive individualized, expert care via video. Our virtual services are offered for our PHP, IOP, and outpatient services.

Parking: Ample parking is available onsite for no fee.
Public Transportation: The #6 Bus is the fastest route to access the Charlotte Center via public transportation. Take the #6 outbound to the East Blvd and Scott Avenue stop and proceed toward Scott Avenue. Our Center is in a brick building shared with Atrium Health, which will be on your right in 0.1 miles.
Alternatively, take the #19 Bus from the Charlotte Transportation Center to the Park Road and Ideal Way stop. Proceed toward the intersection and turn left onto Ideal Way. Go 0.5 miles (about 10 minutes), until you reach Kenilworth Avenue. Cross Kenilworth Avenue and take a left, turning right onto the road between the last residential house and the brick apartment building. Follow this sidewalk around the apartment complex to the left and use the crosswalk to take the sidewalk, passing the bushes, and enter Veritas’ parking lot. Proceed toward Scott Avenue, and the front of our building will be on your right.

Eating Disorders Treated by Veritas Collaborative
Our eating disorder treatment centers offer a comprehensive range of personalized eating disorder treatment options designed to address various eating disorders and co-occurring mental health conditions. With options for virtual and on-site eating disorder recovery programs, we strive to provide care that fits into your life.
For those struggling with anorexia nervosa, a condition marked by an extreme fear of weight gain and a distorted body image, Veritas Collaborative provides in-depth treatment plans to guide you on the path to recovery.
We also offer specialized treatment for bulimia nervosa, a disorder characterized by cycles of binge eating followed by compensatory behaviors like self-induced vomiting, commonly known as purging, or excessive exercise to offset weight gain.
Veritas Collaborative also offers support to individuals dealing with binge eating disorder, which involves episodes of excessive food consumption often triggered by negative emotional stimuli and a lack of control over eating.
You can also get help for OSFED (Other Specified Feeding or Eating Disorder) at our eating disorder treatment centers. People who experience eating disorder symptoms that impair their life but do not fit the diagnostic criteria of other eating disorders may be struggling with OSFED.
ARFID (Avoidant/Restrictive Food Intake Disorder) is a condition for which you can receive care at Veritas Collaborative eating disorder treatment centers. ARFID is commonly experienced as a continual failure to meet appropriate nutritional and/or energy needs. This is often because of an apparent lack of interest in food, avoidance due to the sensory qualities of food, and/or concern over adverse consequences of eating food.
Eating disorders sometimes occur alongside a range of other psychiatric and developmental disorders. Such co-occurring disorders are another aspect of eating disorder treatment that we attend to at Veritas Collaborative. Intensive residential eating disorder support may be advisable for certain cases of co-occurring disorders.
